While is does not directly state on the container it is "Dutch Processed", the label does state it contains Coca Powder and Potassium Carbonate (Dutch Process). My guess is, it is minimally Dutch Processed with the Potassium Carbonate so it is a little more on the Bitter side than a traditional Cocoa Powder might be, but at a much higher price. So not a big deal. Depending on what I am making g with it, dictates the type of sweetener I use. hot and cold beverages, I use a 4 to 1 ratio of Sweetener to Cocoa. There are no other ingrediants listed on the label and you can tell there are no fillers or anti caking agents added. So, test a little to get your personal taste and this so far is a good product. I have not Baked with it yet but soon will be. You must prep this a little before using. I highly suggest using a small manual or electric sifter to make sure you get the clumps out. This product clumps very easy. THE BAD: Nothing really bad. I highly suggest once you open the container, transfer it to an airtight container and either add a food grade silicone packet or a napkin to absorb moisture to keep it from getting large and hard clumps. The original container is a decent pantry style container, however, its not air tight. THE UGLY: Overall nothing Ugly. My only concern was, the product comes in a thin plastic pantry container that was delivered in an envelope? Both containers were pretty beat up. They remained sealed, but pretty beat up. I use it sometimes for protein drinks, coffee drinks, milk drinks, even mix it with peanut butter for that peanut butter cup taste. It dissolves and mixes pretty good.
