There is an insert that serves the same function. Do NOT put water between the roaster and the insert. The food cooks beautifully. Moisture is so well retained that you will need to use a baster to remove juices at 45 minutes and 1-1/2 to 3 hours. Otherwise you get boiled Turkey. Keep the juices for gravy making. **Q: Is there a chemical smell on first use** A: No there is no chemical smell. I roasted a chicken in mine and it was delicious. Browned nicely too.
