## Questions & Answers

**Q: Most of the recipes call for BUTTER.  When I substitute canola oil, the loaves turn out dense and hard. Ideas?**
A: I was always taught in terms of substitutes for butter, oils will always make a denser bread/roll, and experienced this myself. My understanding is if you use something of a like texture (solid at room temperature) it should be lighter, less dense. It would also be denser if you melted your butter before adding it to the recipe. At least, this is what my Mom and Grandma always taught me, in cooking. Stick to something solid at room temperature...coconut oil would be the first thing I try, I have used it several times in baking with good success.

**Q: What is the difference between this Cuisinart CBK-100 and the Cuisinart CBK-200?**
A: The CBK-200 has a max 12-hour delay cycle vs the CBK-100 13-hour. The CBK-200 also has 16 program settings, that's 4 more than the 100. Low carb and artisan dough are some of the newer settings. The CBK-200 acts like a convection oven (meaning that the heat is assisted by fans to force air movement) resulting in a more even bake, this is lacking on the 100. In terms of physical difference, the CBK-200 is 8lbs lighter than the 100 (14 vs 22) and their dimensions are 14.5" x 7.5" x 12.5" and 16 1/2" x 10 1/4" x 12" respectively.

**Q: gluten free cycle?**
A: Yes, it has a gluten free cycle.  This is really important if you are cooking gluten free bread, as it only has one rise cycle, rather than 2 in regular bread.  I'm finding though that my bread is a bit doughy- it could be that my recipe is for a larger loaf.  You can adjust loaf size for regular bread on this machine, but not for gluten free, nor can you adjust for darkness of the crust.  So when my cycle is complete, I pop my pan into my preheated oven for an extra 10 minutes.  Still a great machine, and still a great cycle.  I have Celiac's, so this is important to me.

**Q: Has anybody used the jam making feature on this or any other models?  I am also wondering about the gluten free breads.  Thanks all!**
A: No on the jam. The gluten free bread comes out amazing so far it's the best bread machine for the gluten free cycle. I have two friends that have this one and bought it specifically for the gluten free cycle and they too recommended it to me. It's a great machine and very compact.
