I remember when we couldn’t get it anymore, it was quite an adjustment! Low-country Carolina folk eat rice in place of mashed potatoes, or always used to. I like that this rice cooks quickly compared to other rices, but you do have to keep an eye on it to avoid overcooking If you use a rice cooker as I have. There are many articles on the proper way to cook this rice and I will try them, but so far I have used my cuisinart rice cooker (rice cookers have not been recommended by the articles I’ve read). The cooker clicks from cook to warm in around 10 minutes but the rice is not done. I leave it on warm and keep an eye on progress through the glass lid. In my opinion, when the rice is still steamy but not under water or dry on top, it is ready and the texture and flavor are amazing.
