**Q: Mixed with butter and applied to a 15lbs turkey, how much poultry magic shouod i use?**
A: We raise and market Narragansett turkeys. For a 15 pounder, I'd say 3 tablespoons of butter (I prefer Kerrygold) and a couple teaspoons of poultry seasoning. Mix thoroughly and rub the breast, legs, wings and thighs. Forget the back, as it will just increase the likelihood of rubbery skin in that area. Then I apply a liberal shot of freshly ground black pepper and a healthy dose of Kosher salt. I pop it into a 450 degree oven for 30 minutes, then reduce temp to 325. Cook to 165 in the thickest part of the thigh area.

A: In my opinion, no.  Its a great spice but I wouldn't consider it something I would use in a Cajun recipe!
