They have kept their fantastically sharp edge and have never rusted. I will never buy another steak knife as long as I can purchase these. My daughter and her family have just returned from Japan to live in my basement so I am having to replace the knives she has taken from me! The next logical assumption would be that is cutlery grade, which is used for surgical cutting instruments, and those are usually 440 or 420.
