Either measurement can be used at the touch of a button. Not sure what the question means by measuring in 20s C. There is a guide on the handle showing fish or the type of meat to be cooked and an indication of whether it would be rare or well done at certain temperatures. However, when I switch it on (before it goes into the meat) it already shows a temperature and I found I had to add this to the indicated temperature on the handle. e.g. when I switched it on this morning it read 20.8 C. To cook meat well done it shows you should read a temperature of 77 C.....I would take this temperature and add 20.8 to get the result of well done meat. I took this information from my older guage as I used them both the first time and using the readings on my old guage the meat was medium this new one said well done. When I cut into the meat it showed that my older one was correct and this one was not - therefore I will add the initial reading to whatever temperature the guage says I shoud look for. However, this may be just the one I got and others may read more true. I think it is a case of trial and error. **Q: Does this have the table printed on the device? Some pics show it some don't.** A: When I bought this, the one that arrived did indeed have a table printed on it. I wonder if the pictures have been updated. I was specifically looking for one with it printed on and I would have wondered the same.
