We make tofu flower on a large scale, around 50 gallons at a time so it's sort of hard to say exactly. Also, our soy milk is not going to be identical. Just try to use as little as possible at first and slowly use more. If too much is used, you'll taste a slightly sour flavor. If too little is used, coagulation won't be enough. Dissolve the tofu coagulant in some water and then mix the coagulant water into the hot soy milk. Do not over mix. Just mix it enough and then let it sit for at least 10 minutes to coagulate.
