**Q: Is this gluten free?**
A: This product does not say gluten free on the package. This means that it's not tested for the presence of gluten, AND packaged in the same facility as Bob's packages their wheat flours. If you have someone with a food allergy that could react, don't use this one. It looks like Bob's has discontinued their GF masa... :(

**Q: Non GMO?**
A: Yes, it is non-GMO.

**Q: Can i use this to make polenta?**
A: Not if you want it to taste like traditional polenta.  The texture and flavor will be different because the grind is different and because the ground corn in this is processed with lime.

**Q: is the corn treated with lye?**
A: No. The way that masa harina is prepared is by soaking with lime (the mineral, not the fruit). It's the limewater that breaks down the dried corn and gives the resulting pupusas, tamales, or tortillas their wonderful aroma. The process is called "nixtamalization." You can readily find more information about this process on the internet. Lye includes sodium hydroxide (NaOH). Limewater includes calcium hydroxide (CaOH).

I absolutely love this Masa Harina. The quality is so much better than the commercial brands. As you can see in the photo, I make my arepas with added chia seeds, and the dough handles it perfectly! It creates a beautiful, golden crust in the skillet and the flavor is authentic and rich. I feel much better serving this to my family because it's Non-GMO and less processed. If you want to take your arepas to the next level of health and taste, this is the flour to buy!
