Review: Lots of tips for newbies here - These are authentic. They are not Bisquick-style fluffy dumplings. They are dense and have some chew. They are a bit bland and are intended to be eaten with gravy or meat drippings. They're easy to make with a few tips. Some mixing suggestions follow. If you are new to these, definitely use the egg, as it makes them more foolproof. The quantities on the package are correct - be sure to measure properly by adding the egg to a measuring cup, then adding enough milk to total 2 cups. Beat the egg into the milk to mix well, then stir in the mix. After about 15 seconds, the mixture will become thicker and continue to thicken. For a lighter texture, as soon as the mix is stirred into the eggs/milk, beat it with a whisk or spatula for 15 seconds and it will incorporate some air that will lighten the dumplings. Now wait another 5-10 minutes to allow the mix to fully hydrate. Then, scoop these by 1/4 cup portions, and you will get about 8 or 9 per package. Use moist hands, and roll into balls. Drop them into boiling well salted water. Keep the water at a slow bubble from start to end. Cook them for the time on the box. Drain them on a clean towel. They are hot, round and slippery when they come out of the pot - be careful. If you have to hold them, roll them in some melted butter, oil or other fat so they won't dry, and cover them. They can be reheated slowly in a small amount of gravy or water, or microwaved. You can increase the flavor by adding 1/2 tsp garlic or onion powder, 1 tsp dried herbs, 2 Tbsp chopped parsley or fresh herbs, and/or 2 Tbsp butter, chicken or beef fat. Add these things with the liquid. They're a good change from potatoes or noodles with a roast. Although not traditional, these are delicious smothered in red sauce and cheese.
