Review: Excellent taste, good texture, nice change from yellow grits. - These are a bit of a time investment as they do take 30 minutes to cook. These are coarse grind which means it's just going to take longer to cook. However it's been worth it as they have a fantastic texture and a rich blue corn taste. Fortunately these do not require constant stirring like some other grits I've tried so you can make a these as a side dish as long as you remember to get in there every couple of minutes to give it a stir. Do keep these in the fridge, they'll keep longer and taste better long run. Bit annoying but you wanted a better quality product so it's going to be less convenient.
