The most important thing to do is to add enough salt (I use sea salt) to the sauce. By the way, most Italians call it 'gravy,' not 'sauce.' Fresh, chopped parsley is usually added as well. Beyond this, it is up to you to personalize and get creative: you could add add chili peppers or crushed red pepper to the olive oil ... you can also add freshly ground black pepper ... try oregano leaves (dried) or even a bay leaf. In Italy, some add a little dried sage, etc. ... some add freshly grated cheese ... I save the cheese for topping the pasta.
