Ingredients: duck foie gras, water, truffles, Armagnac [Armagnac, salt, pepper], salt, sugar, sodium erythorbate, white pepper, sodium nitrite and gelatin. Allergens: free. Serving Rougie foie gras: refrigerate before serving. Open both ends with a can opener and push on one end to remove content from tin. Cut into ¼inch slices and serve cold. I’ve probably been ordering this for myself for the last decade. Being shelf stable it does stay perfect for at least 2 years in my pantry. My nephew lives in California where this can’t be shipped, so I order for his birthday or holidays to be shipped with other items. 🎉 My impression of this product hasn’t changed over the years. It has a long shelf life and is the perfect size for a one or 2 person household that wants an occasional indulgence. Do make sure and chill it to make opening and removing, else the duck fat will be liquid. Chilling before opening give that nice layer of fat when serving.. if you don’t immediately finish, it will store in the refrigerator for at least 4 days. The price has gone up a bit, but is very reasonably priced for the quality. OK I’m spoiled. I grew up eating the finest goose foie gras (60+ years). Yes this is duck not goose liver (even in France today it is near impossible to find goose). This Canadian product is excellent. Personally, I think it worth the extra few dollars for the ‘with truffle’. Though the percentage amount for the truffle appears small, in fact it is a generous amount that runs through the entire length. Photos of the opened product on other sites show this, and the delivered product is true to those photos. Do understand this is pate/mousse not block, (whole pieces of liver). The flavor is lovely. The cans open easily. Served on pieces of sliced baguette bread, I found it would nicely cover 6-8 slices. The pate de fois gras spreads easily. Best of all, unlike much of Rougie’s products, this is ‘shelf stable’ so can be stored in the pantry for a year or more. No refrigeration needed before opening. The best way to serve it to refrigerate before opening. That way the fat will solidify and remain as a coating when serving, which adds to the flavor. With my current order, I will now start the new year with four tins in my pantry. Review: A Sublime Remembrance of France - Tariffs be damned, this is totally worth the price, and will bring you back to Paris in two quick toast points.
