Sorry ........this yeast is very fresh and active, I would buy it again! **Q: Are the packages nitrogen-flushed?** A: Doesn’t appear to be and there’s nothing on the packaging to indicate that it is. **Q: Is the sorbitan monostearate and Ascorbic acid corn derived ?** A: I am not the manufacturer, but my son and I are both allergic to corn. We don't have any reactions or other issues when using and eating this product. **Q: What is the shelf life of this product?** A: You have a shelf life of a couple years. But if you have the yeast in less than ideal conditions then the shelf life may be less. Any time you want to test to see if the yeast is still good, then take some warm water, stir in a teaspoon of honey and sprinkle the yeast on top of the water and let it bloom.
