We clean it with simple vinegar diluted in water and condition with food grade mineral oil.
Review: Fits perfectly and is very nice - It was very difficult to find the right size for my 20" x 20" stove, so when I saw this I got it. It is intended exclusively as a surface, not a cutting board. There are no cracks or hints of impending cracks. It is sanded quite smooth, except for two places on the side which aren't rough but which might snag something fine like a stocking. It's pretty. It is also quite heavy. It does have a slight odor, bamboo or glue maybe. It is slight enough after a day for it not to bother me, and I'm generally sensitive to odors.
