Review: Best Soy Sauce I've Ever Had! It's Rich, Aromatic and Tasty! Aged for 1,000 days! - OK. Why did I buy this? Well, TBH I watched a video on how traditional Soy Sauce was made by hand thousands of years ago. I had NO IDEA there was so much to this! All I can say is if you want the BEST traditional hand made Soy Sauce take a look around before you buy what you normally do. This particular Soy Sauce is made in Japan and from what I can tell took about four years or so to reach the final product. The taste and smell are amazing! I use it on Sushi and various rice dishes I make. Yes, the cost is higher than the other stuff but I suggest trying this at least once. It's so good! There are I think three versions of this but this one has the longest aging from what I can tell. 1,000 days of aging! It's like a fine Whiskey sitting in an Oak cask getting tastier and tastier as time passes. This brand is going to be my go to brand from now on!

**Q: How does this differ from the koikuchi sauce of the same brand?**
A: When it comes to make koikuchi soy sauce, the ingredients are koji(attached to soybean&wheat) and salt water.
When making this premium soy sauce, instead of salt water, soy sauce once brewed are used,
meaning that this premium soy sauce is double brewed with double ingredients & times.
By doing so, the flavor and umami turn deeper and stronger.

**Q: Looking for artisinal japanese soy like that featured in salt*fat*acid*heat (samin nosrat). thick, has "legs"! any suggestions?**
A: This brand is very salty.. I would suggest Jimmy Chews (?) Chinese soy.. very thick, tasty, mild salt. And a cool bottle. 😁

**Q: Is this brewed in metal  or in wood  barrels?**
A: As Japanese soy I assume wood.  I have been there years ago to a plant with this name.  I can't  attest today how it is made.

**Q: Is it gluten free is it gluten free**
A: It is made the ancient traditional way from soy beans, wheat, and sea salt with active enzymes.  There is a youtube video showing the building this is made in, which dates back hundreds of years.  In the end though, wheat is used in the fermentation process which could result in trace amounts of gluten being found in the sauce.  I'm not a food scientist, but if your reaction to gluten is strong, might want to avoid all soy sauce.  If you can tolerate this, I'll say it is sooo much better than factory produced brands and highly recommend!

It's expensive but it's worth it. It tastes fantastic and the salt doesn't overwhelm the other flavors. It's well packaged and hasn't ever leaked in shipping It lasts me a good long while as I use it sparingly.
