I wanted a good all-rounder for prepping veggies for roast dinners, cutting up fruit and everything else. I don't mind paying more for quality as I will look after these beauties and hopefully they will last a lifetime. I'm already saving for the santoku and kiritsuke knives to add to my collection. Not because any of the other knifes were not up to the task but I had found that I was using the Zelite bread knife (which is outstanding by the way) for some food types with tough skins which required a bit more of a "sawing" action as opposed to a slicing action. The knife arrived in the customary top class packaging in super fast time from order. Again the knife was well protected within the packaging which is what you would expect from such a high end item. This knife is seriously sharp!! care must be taken when using it. The knife again is very well balanced and is very comfortable in the hand when in use. I used it with a number of tough food types such as turnip and butternut. The knife cut through the tough outer skin layer with ease and then continued through the hard interiors with very little effort. This resulted in much more pleasurable experience of preparing both the butternut soup starter as well as the Sunday roast that followed as once the knife was out I did the rest of the vegetables with it. This knife is certainly an all rounder with the ability to use the sawing action for those tougher moments in food preparation.
