**Q: Should the capers be soggy and damp with moisture in the bag? Super salty after soaking 45 mins? Thanks.**
A: Should not be soggy and damp.. Transfer the capers to a glass jar and refrigerate.  I rinse them in a colander and soak them for 5-10 mnutes and never super salty.  cook your dish without adding any salt and only add salt if needed after tasting.

**Q: Are these the freeze dried capers?**
A: No, they are capers that are packed in sea salt.  They are not dried.  To use them, you rinse them under the tap for awhile to wash off the salt.  They still remain somewhat salty.  They are far superior to the capers that are packed in brine.

**Q: Are these caper buds or berries?**
A: Buds, not berries. They're great.

**Q: How should they be stored and how long are they good for? Thanks!**
A: They are good well over a year unopened. They may also be shell stable after opening but I am not sure about that. After opening I keep them in the fridge and they seem to last indefinitely. The flavor and texture of capers in salt is much better than in brine, but you need to soak them for 20-30 min and rinse before use.
