Review: Nice substitute for dairy - I saw others saying it didn't dissolve well, but as I tend to blend chilled espresso or coffee, it worked very well. I sweeten it when warm, so that dissolved well, chill it, blend it with a few spoons of this and pour into a chilled glass or thermos over ice. It's lovely. Adds the right level of creaminess, a hint of a coconut flavor (which I like, I'd even enjoy it a little stronger) and the best part to me is no dairy or creepy thickeners (like carrageenan or guar gum). I did try using the canned coconut cream, just the solid part, but it's still very oily and fatty, without the creamy outcome I'm looking for, so this version is better on all fronts. If you don't want to use a blender or take your java hot, I don't know how this will work, but for blending into smoothies or cold/ice blended coffee it's terrific.
