I still make the odd curry for myself but Pataks, Sharwoods etc, sauces never really managed to recreate the wonder of authentic Indian cuisine. And then i tried this and was overwhelmed by the smell and the flavour, an authentic curry making experience without the cost and space required to build an extensive spice collection.. Based on my memories of the 1990's i decided this would be best made with large chunks of chicken breast, at stage two i added lots of sultanas and a few sliced almonds.
