We offer specialty-grade green coffee beans providing home coffee roaster aficionados opportunity to personally roast their own coffee at home. Our fresh recent harvest premium beans have great flavor potential if roasted correctly. Coffee roasting has been mysterious in years past with only privileged few learning deep secrets associated with roasting good tasting coffee. In recent years this has changed as many are learning to roast coffee at home. Many begin with basic equipment like; pan on stove, hand-cranked popcorn popper, hot air popcorn popper, heat-gun into stone bowl, basket on grill, many ways to start. It is possible to achieve satisfactory results with basic methods, but soon most new roasters realize there is fine line of time and temperature needed throughout roasting process to fully unlock development of all the bean’s natural delicious nuances. Basically, beans need to be heated to around 400*F within 10-15 minutes time, then use fan to cool to room temperature. After this is complete you can grind beans to brew your own home-roasted coffee. Secrets to know: 1-The beans need even-heating from surface to core; this requires stirring or tumbling during roasting. 2-Better taste is found with higher heat in beginning then slowly drawing down heat as roast progresses. 3-Shorter roast times 7-10 min develop higher acidity with greater complexity. 4-Longer roast times 10-15 min develop lower acidity, complexity, with higher body. 5-Fresh current-crop high-altitude-grown coffee beans have more intense flavor complexities. Developing your profile: Determine flavor qualities you want. For higher acidity and complexity create your profile to complete in 10-12 min. Develop the roast evenly surface to core. Adjust time and temp ratios to achieve your own personal taste preferences. If it tastes grassy, it is underdeveloped. If taste is sour, apply greater heat. When roasted correctly coffee should taste sweet, bright, full of delicious flavor complexities.

Review: Really great - I got this 5 pound bag of Brazilian ("Nutty chocolate cocoa creamy") coffee beans because I got a FreshRoast SR540 a couple of months ago and it came with several 1lb bags of coffee. The problem there is that I couldn't use the same beans to experiment with different roasts and setups, so I bought a 5lb bag of beans here. That really, really helped me get my roasting figured out and helped me to learn that the thing I was missing was the "set-up" so that the coffee wasn't really sour. Turns out that 2-3 days of letting the coffee sit and breathe (I'm using mylar bags I found on desertcart for setup, then I can just seal them up for storage). I'm doing this at a medium roast (fan 9, heat 5 for 6 minutes, fan 7, heat 5 for 6 minutes in the SR540) and then a 2- to 3-day setup. It smells amazing when ground and tastes wonderful in the cup. I'm not really experienced enough to go into flavor notes, but it's tasty and a bit sweet and I'm very happy with the results. A 2 day setup leaves it just a little tart, a 3 day setup removes the last of the tart and it's just a very, very good cup of coffee. I've ordered the 12.5lb bag of the same beans (I think) and another 5 pound bag of some Guatemalan to try. Coffee roasting is easy and a lot of fun. For the rest of the details of how I make it I'm using a hot water dispenser I got on desertcart (Northmas D20) on the highest temperature at 8oz with an Aeropress and following the manufacturer's instructions except for using a bit more coffee grounds (at the fine end of "drip" on my Shardor burr grinder I, of course, also got on desertcart) and filling the hot water up to the 2 mark instead of the 1. I'm using both a metal mesh filter and a paper filter. Best cup of coffee ever.

**Q: Is this crop protected with pesticides?**
A: The farm of origin is Finca Nueva Granada, Guatemala.  From their website: http://www.nuevagranada.com/   
"Sustainable Agriculture:  The coffee cherry pulp and organic matter are composted and used as organic fertilizer and we have begun to compost macadamia shells as well. The farm follows all the Rainforest guidelines for sustainable agriculture, using only the few approved agro-chemicals. We are experimenting with natural methods to control insects and use farm-made traps to catch the coffee borer"

**Q: is this coffee shade grown and I don't see organic anywhere on the package. Is that important? I understand coffee is a heavily sprayed crop.**
A: I cannot find any information on the shade question re Farm: Finca ueva Granada, Bourbon. It's in the Antigua basin at about 1800 meters elevation. I must say, this is some of the most delicious coffie I've roasted and I buy it over & over again (along with Sumatra and Nicaragua, my other avorites).  I usually roast three batches and blend the three - one batch medium, one a little darker and one dark - awesome blend!  As for organic, if you're concerned of the spraying, I cannot say if this farm sprays or not, but the coffee cherry has a hard outer shell, which protects the inner seed/bean from the vast majority of any unhealthy affects of the spraying. So, I personally do not see much benefit from going "organic" with coffee, just as with bananas or nuts.  I hope this note helps. Enjoy the coffee!

**Q: How will this do in a sonofresco 1# roaster? any tips? specific profiles? i like my coffee on the dark side but not charbux dark.**
A: Dont have knowledge about that roaster. but if it helps I use a behmor roaster.
I normally would set for profile 1 and run 13OZ of green past first crack untill about 2 minutes later the 2nd crack starts rapid fire . I let that go about 15 seconds and start cool down. Definately dark roast and soon oily... perfect for the night shift wife...

**Q: When is it cropped?**
A: Usually @ Bourbon coffee harvest in the regional cooler months: between November & February.

I got this 5 pound bag of Brazilian ("Nutty chocolate cocoa creamy") coffee beans because I got a FreshRoast SR540 a couple of months ago and it came with several 1lb bags of coffee. The problem there is that I couldn't use the same beans to experiment with different roasts and setups, so I bought a 5lb bag of beans here. The beans are good but are smaller compared to Colombian or Dominican beans I buy at coffeebeancorral.com. And yes, nice body and with a chocolate taste. I use a Gene Cafe. Preheat to 375 for 10 minutes, then roast at 464 until a 1 1/2 after first crack (roughly roast between 12.5 to 13.5 minutes). Please let me know if you have a better profile
