So where does cocoa butter come from if not from the nibs? If you look at the Nutrition Facts on the package you'll see that the fat content is around 21%...that's cocoa butter. The nib is a seed (containing cocoa solids and cocoa butter) not a chocolate chip which is what, among other things, chocolate manufacturers make from the nibs after a significant amount of processing.
