I have had no discoloration. The instructions specifically state NOT to use any spray on non-stick coatings. I have had good luck with butter and parchment lining before baking but also used the cookie sheet with NO coatings and it worked just fine. I wash these by hand.very easy clean up. **Q: Can I put these in the freezer?** A: I have put the baking sheet in the freezer to quick-freeze strawberries or blueberries, and have seen no ill effects to the sheet.
