**Q: Why do i not see the mandatory accredidation "aceto balsamico tradizionale di modena" printed on the label if it is the real thing?**
A: Perhaps you are referring to the DOP accreditation (Denominazione di Origine Protetta) rather than the words in your question. DOP certified balsamic vinegar production is subject to oversight be the DOP consortium. The balsamic can only contain grape must and nothing else - no wine vinegar, no sugar, no caramel coloring ... nothing. It has to be aged for a minimum of 12 years, and comes in a specifically shaped bottle which the produce has to buy from the consortium. It will also cost you 2-3x more than this depending on the source.  I have a couple of bottles of the DOP and it is truly amazing balsamic, but at about $100 for a small 3.5 ounce bottle I use it sparingly and probably wouldn't put it on a salad. I've not tried this particular balsamic, but from the reviews, it looks like a good balsamic for salads and many other uses.

**Q: can anybody compare this to other 18 year aged balsamics?  A lot of the young stuff is barely dense.**
A: This is not  aged18 years, but is good. You'll have to  try a few pricer  brands or go to a DOP to get much better, althugh tastes vary of course. Botte Piccola is similar but less tangy, Mussini Reserva di Famiglia  is a step up to 14 years ages but is only 100 ml, not 250. Mia Bella is not in the same class, it's more food-grade. Hope this helps.

**Q: Can anyone confirm this is actually an authentic product and not a fake? Just curious before I buy**
A: My Opinion: I am on the second bottle, both purchased through this Amazon seller and they both appear to be the same to me. One was a gift , we really enjoyed the product and therefore purchased a second bottle ourselves.  I personally really like this product so if it is authentic or a "fake" it sure tastes good...My guess is that you would need to have tasted the "original" or authentic product from another source, and then you could identify if in fact this is a "fake"... We will continue to purchase this product so long as it continues to taste good to us.  Cheers!

**Q: Why is the vinegar comes in clear bottle? I thought balsamic vinegar is best kept in dark bottle?**
A: I suspect to avoid ultra violet light.  Vinegar is fermented by bacteria. Bacteria are sensitive to ultraviolet and even blue light and it impedes their reproduction and metabolism.

I know it is expensive, but I think it is worth it. I’ve been drizzling it on salads and it is wonderful. It is so rich and sweet tasting. Just a little is all that is needed to give a big salad flavor. I have also lightly drizzled it on mozzarella cheese balls for a wonderful appetizer. No need for oil, sugar, or any other ingredient - just the balsamic vinegar. I am on my second bottle.
