You can always add more, but you can't take it out. Try a drop on your finger first. HA! It's got a punch and it is right up front, not one of those sneaky hot sauces. But it's not stupid hot, either. It's just right. And the smokey flavor is perfect. Goes great on eggs, too. And is the secret heat in my meat-n-red beans chili (along with unsweetened chocolate). It really is an amazing hot sauce I can't really compare with any of the other couple of dozen in the 'fridge.
