**Q: These are just ground corn (i.e. polenta), not ground hominy (aka grits, at least as I was brought up in NC)—correct?**
A: Nope.
Grits are ground corn, period. Cornmeal, also from corn, is very fine in texture while grits are a courser texture.
Hominy grits are also from corn, but processed differently.
So, if you want true grits, this product would be it. While I am familiar with what you are talking about, because I am also from the Deep South (Charleston, SC), grits is ground corn.

**Q: Would this be the same as (or a substitute for) fine ground cornmeal?**
A: No, this is far too coarse to be used in place of cornmeal.

**Q: is this coarse or fine grind? I'm told the best polenta is with coarsely ground.**
A: There is course and courser than course. I think that they are course. Corn meal would be courser.

A: Too thin
