In the food & drug industry this is known as a "clean label" when the truth is technically (legally?) printed on the label but for reasons of food fads and legitimate problems people may have with certain ingredients - carrageenan and MSG being two - the manufacturer wishes to obscure the true ingredients to sell more product. I don't know if there is this much difficulty with gluten labeling but if you've ever had a reaction to one of these ingredients you know why reviewers say things like "I avoid carrageenan like the plague."
