Why do some people buy the extra weight?** A: This canner is ready to use as-is by closely monitoring the dial gauge. The regulator cap that comes with it will keep the steam valve closed until the pressure reaches 15psi, at which the regulator will start to wiggle to let off steam and relieve pressure. I choose to use the 5/10/15 weighted regulator because most of my canning is at 10psi. I set it for the proper weight so it wiggles at 10psi. This gives me an audible cue at 10psi so I don't have to watch that dial like a hawk. I can hear the rhythm of the regulator rocking and more easily adjust the heat without dipping below pressure and having to start the time over. I can keep it within earshot while I do other things. Without it, I was constantly checking the quite canner to make sure it hadn't dropped below 11 on the dial; plus, I don't worry about the dial malfunctioning because the rocking regulator insures I'm at pressure. **Q: Does this canner come with a rack in the box?** A: No rack, just the removable base with holes to keep the jars off the bottom of the pan. I use my jar lifter from my kit and have not had a problem. Yeah, it would probably be a little easier with a rack, but not enough to justify the additional cost if it was included. With my arthritis, I couldn't lift the weight of all the jars anyway. Dear Hubby does it for me with the water bath canner. **Q: does it come with the weighted guage?** A: Our 16 quart(01755) model canner comes with a steam dial gauge and a 15 pound regulator that will only rock when the pressure has reached 15 pounds. I would highly recommend as it is easy to use and comes with great instructions for small city garden canning. ### ⭐⭐⭐⭐⭐ Works well, cover hard to get off. *by J***S on November 4, 2024* Followed all cleaning and lid oil instructions. The lid was extremely difficult to get off, it was STUCK. got it off 1 time, but had to turn it on its side and struggle with it for about 30 minutes before I finally was able to turn the cover to get it off. I then re-oiled the lid areas and the lid sealing ring, closed it back up a second time and again, the lid would barely turn to get it off. It does take some muscle to get the lid in but I finally got the hang of it while using potholders and both thumbs pushing in opposite turns. I’ve been able to can several jars in f food with no issue. I am actually happy with it now. Be warned, you must add the vinegar in the pot, with the water or the inside of your pot will turn black and it will be hard to see the 3quart water line mark which is VERY lightly edges on the inside where the handles are. I use a weighted rocker( not the official name) it helps so I don’t have to keep turning the fire up and down to keep it at the appropriate PSI Level. The pot holds plenty of jars at a time, just read the manual for specifics and don’t can less than 3 jars at a time. Good quality. Good seal. Parts turn black easily though.
