And while this jerky doesn't really fall into either of those categories, it's not that soft tender, but tastes like it has no shelf life kind of jerky. This is more salty than sweet and definitely has a little heat to it but I like things really spicy so I wouldn't consider this hot. It's flavor is terrific and it takes a little bit of chewing but still pulls apart nicely and has a small batch kind of feel to it. I feel like I could be out on a prairie a century ago eating the same thing, but this is probably better than I'm describing it. Jerky preferences are kind of a personal thing, and what's salty for one person may not be for another, so i would suggest trying this if you haven't and form your own opinion. Their other flavors are great too if you don't like hot.
