## Questions & Answers

**Q: how much of the enzyme should we use? What is the temperature? Do we need to worry about the pH?**
A: I'm a distiller making mashes from corn, rye, wheat, etc.  I used 2 lbs 6 row malted barley to derive alpha amylase and 1/2 tsp. gluco-amylase per 5 gal. wash.  Temperature should be no higher than 145 F.  Most of the starch conversion will take place in a short amount of time, but I usually let mine set overnight (12 hrs) before I remove the grain.  I usually set the pH to ~5 in my starter water, but gluco-amylase wants it to be in the 6-7 range.  If you start with distilled water, be sure to add gypsum to "harden" the water.
