The best seems to be the Ceylon as it has only very small amounts of coumarin compared to the cassia variety. As coumarin can cause kidney and liver damage, I decided to go with the Ceylon variety. The Naturise has a nice, subtle aroma and taste and is lighter in color than the cassia I purchased cheaply at a local farmer's market. One of the disadvantages seems to be that when baking or cooking with this cinnamon, the flavor diminishes more than with the cassia variety.
