**Q: How can this be both picante and mild?**
A: Picante means “spicy” and this lipase is a mild spicy, not a more sharp spicy like the Kid Lipase or very pungent spicy such as Lamb Lipase.  Best, Paula

**Q: Can it be used in Cheddar Cheese?**
A: The Lipase is not the primary enzyme but it can be used in Cheddar to add a sharper flavor.

**Q: Do I keep this in the freezer or fridge?**
A: I store it in the freezer!

**Q: How many ounces are there in the packet?**
A: They are 1 tablespoon which is approx., 0.6 ounce.  We do offer larger sizes directly from the farm.  Thank you, Paula

I've always wanted to try making homemade cheese, and the recipe I have called for Calf Lipase. It is an enzyme that helps make the cheese and add flavor. I've only used it once to make mozzarella and it came out very tasty. I will definitely be making more cheese and using this calf lipase.
