Review: Top of the heap - In the mass-production market, Misono makes phenomenal knives and doesn't get as much attention in the west as in other parts of the world, at least not in the consumer market. The UX10 Chef's knife has been a staple in working kitchens for decades. I've used a variety of paring knives from Victorinox, Shun, Mercer, Wusthof, and Henckles over the years and this is at the top. The Molybdenum steel has been great for me; easy to sharpen or touch up between sharpenings, no staining, and not so soft it'll roll the edge on harder products. I love that it is full-tang and looks classy; a little mineral oil on the handle keeps it from fading. I have large men's hands, and the handle is actually perfect for me. It feels like holding a carving or whittling blade, which is exactly what I want. For a paring knife, I prefer the French/western style handle to the Japanese Octagonal or D-shaped handle utilized by Shun, which would be my second choice. Shun's blades are extremely fine and I feel their steel is a bit soft for how steep the grind is, but when used properly they are every bit as capable as a custom blade. For the price, I suggest trying a few of these and finding which fits you best. Or, get the Misono and never look back!
Review: Molybdenum is the key - Ordered 2 by mistake- however, this size & its quality & appearance also are impressive Steak Knives & will be back for more. Stainless steel knives are worthless. They may cut well for 2 days- despite appropriate care, they rust within a week. I’m not a materials engineer, but a friend gave me a set of Japanese Molybdenum knives (@ the time, an “odd” gift.) They came with a ceramic rod sharpener - a MUST HAVE!!!) & said I’d have them for a lifetime… another “odd” statement. He was 1000% correct. I’ve had those knives for 4 decades & they are fabulous… However, I needed a set of knives for a 2nd home. Misono gets 5-stars for its blade, balance, functionality & appearance. The sleek black handles are elegant- even for a formal dinner. Took me awhile to find Misono on desertcart site. But looking forward to adding to my collection: Misono knives are “collectible”. 🆘desertcart My only suggestion: for customers who cannot read Japanese, please add a slip of paper in English so we’ll know how to care for the knives- they are “investment” grade.

## Features

- STAIN-RESISTANT STEEL: Misono's Molybdenum line of knives are created with a high carbon stain resistant molybdenum steel blade
- QUALITY ASSURANCE: Misono's popularity stems from the thin profile that allows the knife to be used and sharpened for a long period of time
- NIMBLE DESIGN: The paring knife is suitable for peeling fruits and vegetables and hand-held cutting tasks
- LIGHT & PRECISE: Lightweight and thin, Japanese knives have a sharper blade and maintain their sharpness longer than most other knives
- EXCEPTIONAL SHARPNESS: 70:30 Asymmetrical bevel. By concentrating the sharpening on the face of the blade at a steeper angle than on the back, a thin cutting edge is created that approaches the sharpness of a traditional Japanese single edged design
- COMPACT SIZE: Features a 3.1 inch blade length with a lightweight 2.5 oz construction, making it easy to handle and maneuver during precise cutting tasks
- DURABLE HANDLE: Equipped with a composite wood handle that provides a comfortable grip and long-lasting durability for extended use in the kitchen
- PROFESSIONAL GRADE HARDNESS: Blade hardness rated at 56-58 on the Rockwell C scale, ensuring excellent edge retention and cutting performance for professional and home use
