But you have to be patient. You have to have a good dough recipe that is compatible with high heat. Then you have to have a good sauce. This takes time to perfect these two elements. Next and most important to be able to launch pizzas from the peel every time without sticking Parbake your pizza crusts. I do this in the kitchen oven at 450 for 3 minutes. Then freeze the pizza crusts I am not using. Finally, let the oven heat up to 800F but turn temp down to low before you launch the pizza. Every 20 seconds rotate it. The pizza will not cook in a minute and a half it takes mine about 3 minutes to 3 min 30 seconds. The secret is those parbaked pizza shells. It works every time with that pizza sliding right off the peel.
